Recipes I’ve Been Loving

Chicken Sandwich: Thanks to my roommate Paige 🙂

This recipe has quickly become a favorite in my apartment! We have it at least once a week! This isn’t just any chicken sandwich; it has a lot more to it but is still completely delicious! If you’re looking for a simple, low-cost dinner option definitely try this one out!

Ingredients:

  • ciabatta rolls
  • chicken breasts
  • avocado
  • argula
  • tomato
  • bacon
  • hickory honey mustard
  • mayo
  • dales seasoning (optional)

Instructions:

  1. Cook your chicken!
  2. Prepare you’re bacon.
  3. Toast ciabatta rolls.
  4. Mix mayo and hickory honey mustard in a small bowl.
  5. Slice the avocado, tomato
  6. Assemble your sandwich!
Bang Bang Chicken from Pinterest

I recently found this recipe on Pinterest and decided to try it out! It turned out to be amazing and I will definitely be making it again!

Ingredients:

  • 1/2 cup light mayonnaise
  • 2 tablespoons Sriracha
  • 1 tablespoon sugar
  • 1 tablespoon rice vinegar
  • 2 large eggs
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 boneless skinless chicken breasts
  • 1 cup flour
  • 2 cups panko breadcrumbs
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • vegetable oil spray

Instructions:

  1. Mix the mayonnaise, Sriracha, sugar and vinegar in a small bowl and se aside.
  2. Whisk the eggs, salt and pepper in a shallow bowl.
  3. Cut the chicken breasts in 1″ chunks.
  4. Place the flour into a shallow bowl.
  5. Mix the breadcrumbs, onion powder and garlic powder together in a shallow bowl.
  6. Preheat oven to 375 degrees.
  7. Coat the chicken with the flour, the dredge in the egg mixture, then into the Panko mixture and add to a large baking sheet.
  8. Spray with vegetable oil spray for 2 seconds.
  9. Bake for 22-25 minutes or until golden brown.
  10. While still hot, toss with the sriracha mayonnaise mixture.
  11. Serve!

Pizza Bagel

Another apartment favorite! So simple and easy! For this one we just get bagels, cover them with sauce and cheese and throw them in the toaster. Super easy and fast! You can add whatever other toppings that you like but we just like to keep it simple and easy!

Buffalo Chicken Taquitos

Another Pinterest find. I am not usually a huge fan of cream cheese or cheese for that matter, but I love these! I am a sucker for buffalo chicken!

Ingredients:

  • 1 package of cream cheese, softened (8 ounce)
  • 1/2 cup ranch dressing
  • 1/2 cup buffalo sauce
  • 1 rotisserie chicken, shredded
  • 1 cup shredded cheddar cheese
  • flour tortillas
  • non-stick spray

Instructions:

  1. Preheat oven to 450 degrees
  2. Spray a baking sheet with non-stick cooking spray and se aside.
  3. Mix softened cream cheese, ranch dressing and buffalo sauce until well combined in a large bowl. The mixture should be smooth.
  4. Mix the shredded rotisserie chicken and shredded cheese into the cream cheese mixture.
  5. For each Taquito, spoon a large tablespoon of the chicken mixture onto each flour tortilla. Spread a thin line from one side to the other.
  6. Roll each tortilla up tightly around the chicken mixture and place seam side down on the baking sheet.
  7. Once all taquitos have been assembled and placed on the baking sheet, generously spray the tops with no stick cooking spray.
  8. Bake for 10 minutes. Pull from oven and flip taquitos over. Bake for an additional 5 minutes or until golden brown.
